Cloud-shaped Fresh Cream Cake [Oven]
This recipe from dy (吕小厨) is amazing; the internal texture is incredibly soft and delicate, with a slightly moist consistency. It makes enough for two 6-inch dishes, or one dish smaller than an 8-inch dish.

Materials

Eggs (50-60 grams each)

White sugar
20g + 50g
Cake flour
90 grams
corn oil
50 grams
milk
50 grams
Cornstarch (optional)
15 grams
Lemon juice/white vinegar
A few drops

Cloud Fresh Milk Cake Recipe (Oven) Steps

Step 1

1️⃣ Separate the egg whites and yolks from 6 eggs. Sift 90g of cake flour. Sift 15g of cornstarch.

2️⃣ Egg Yolk Mixture (Keep egg whites frozen at this time) 🔺 Add 20g of sugar to 6 egg yolks and beat with an electric mixer until the mixture turns pale and the foam disappears when lifted. 🔺 In a separate bowl, pour in 50g of milk and 50g of corn oil, and stir until emulsified (I used an electric mixer directly). Then pour this mixture into the egg yolk mixture and stir well. 🔺 Add 90g of cake flour and stir well. 🔺 Wash the electric mixer and dry it.

3️⃣ Meringue 🔺Add 6 egg whites, 50g sugar, 15g cornstarch, and a few drops of lemon juice or white vinegar. Whisk a few times (to prevent powder from flying off) and then start whipping. 🔺First whip at low speed, then at high speed until stiff peaks form (when you lift the whisk, very short, upright peaks should form that don't fall out when the bowl is turned upside down).

4️⃣ Mixing 🔺Take 1/3 of the meringue and fold it into the egg yolk mixture, cutting and folding gently until combined (do not stir in circles, and stir quickly to avoid deflating the mixture). 🔺Preheat the oven to 140 degrees Celsius. 🔺After mixing, pour the mixture back into the remaining meringue bowl and fold gently again until combined (again, do not stir in circles, and stir quickly). 🔺Pour the mixture into the mold, stir with a toothpick to release any large air bubbles, and then tap the mold a couple of times.

5️⃣ Baking: Pour the cake batter into a preheated oven. Bake at 140 degrees Celsius (228 degrees Fahrenheit) for 45 minutes. After 10 minutes, remove the cake from the oven and quickly score a cross on the batter. Continue baking for another 35 minutes (check the oven during the last 2 minutes and increase the temperature to brown the cake if necessary). I don't know why the cross shape didn't work. I had to score it, wait 2 minutes, and then score it again.

Tips for making cloud-shaped fresh milk cake [oven]

Every oven is different. You'll need to experiment. I used a steam oven; the recipe called for 140 degrees Celsius, but I felt it could have been heated a bit higher. If you don't have cornstarch, you can use potato starch in a 5:4 ratio, which is 12 grams. I succeeded with that too.
