Steps for making coconut blueberry bread

Cake part: Separate the egg whites and yolks into clean, dry containers. Add granulated sugar and lemon juice to the egg whites and freeze for later use.

Emulsify corn oil and milk by stirring, then sift in flour and stir until no dry flour remains. Finally, add egg yolks and stir until smooth.

Whip the egg whites until stiff peaks form when you lift the whisk.

Take one-third of the mixture and fold it into the egg yolk mixture until well combined.

Pour it back into the meringue and continue to fold until well combined.

Pour into molds, preheat oven to 140 degrees Celsius, and bake for 45 minutes.

For the bread: Mix all ingredients except butter and salt until a rough membrane forms, then add butter and salt.

Continue kneading until a gluten membrane forms.

The surface temperature must be well controlled; it should not exceed 26 degrees Celsius.
