Butter-baked rice cakes were all the rage recently, so I've recreated a low-carb, low-calorie version. I've prepared two recipes (both dairy-free and suitable for those with a low-carb diet). Recipe 2 makes the rice cakes very soft and chewy inside, allowing for hollow fillings, giving them a texture similar to cream puffs. Recipe 1 also has a cream puff texture if you add cream cheese to the dough before baking. Give this low-carb, low-calorie baked rice cake recipe a try during your holiday! The entire batch of batter makes approximately 6-8 rice cakes; each rice cake contains about 1.5g of carbohydrates and about 58 calories. Step 1

Melt the butter or coconut oil and set aside; mix the egg liquid and yogurt/plant-based milk evenly, then add the butter or coconut oil and mix well; add the dry ingredients and stir evenly, then use a spatula to fold them into a batter.
Step 2

Grease the mold with butter, pour the batter into the mold and smooth it out; bake in the oven at 170 degrees Celsius for about 35 minutes (for both top and bottom heat, it is recommended to raise the temperature by 10-15 degrees Celsius; for air fryers, it is recommended to set the temperature to 160 degrees Celsius).
