Perfect for those on a diet! โš ๏ธ I used a bread machine for kneading. Two kneading cycles for 20 minutes until a rough membrane formed, then I added butter and continued kneading for two more 20-minute cycles, followed by natural fermentation. If you have a stand mixer, it's even easier! *Ingredients: 200g Xinliang Master Japanese Toast Bread Flour, 50g Xinliang Master Hard Red Whole Wheat Flour, 1 Egg, 80g Water, 8g Sugar, 3g Salt, 3g High-Sugar Tolerant Dry Yeast, and a suitable amount of mixed grains! (Pumpkin seeds, sunflower seeds, black and white sesame seeds, flax seeds) *Steps: (Refer to the picture below) 1๏ธโƒฃ Mix all ingredients except butter until smooth. 2๏ธโƒฃ Knead until a rough membrane forms, then add butter and continue kneading until a smooth dough forms and reaches the extended stage (no need for a glove-like membrane, just a slightly rough membrane is enough). 4๏ธโƒฃ Let it rise at room temperature until doubled in size. (About half an hour in hot summer weather) 5๏ธโƒฃ Shape and deflate the dough, roll it out, roll it up, spray with water, wrap with the grains, and place it in a loaf pan. 6๏ธโƒฃ Let it rise a second time until it fills 8-9/10 of the pan. 7๏ธโƒฃ Preheat oven to 220โ„ƒ. Bake for about 25 minutes until golden brown and fragrant! **Tips:** โœ… Pre-baking the grains makes them crispier! โœ… After the toast has cooled, slice and freeze it for later use.
