Steps for making "baked" sausage buns

① Except for the last 6 ingredients, weigh all the ingredients listed above and place them in a stand mixer on low speed (speed 2-3), then beat on high speed (speed 6) until a rough membrane is formed.

❷ Add the salt and butter, mix on low speed, then switch to high speed and beat until the mixture reaches the windowpane stage.

❸ Shape the dough into a large ball, cover it, and let it rise at 28-30 degrees Celsius until it doubles in size. Since it's hot, I usually let it rise in the kitchen for about an hour.

❹ It grew to this size in about an hour 😳, then I divided it into 6 equal small dough balls, rounded them, and let them rest for 15 minutes.

❺ Then roll each dough ball to the same length as the sausage (the sausage is the 30g kind from Dacheng German Sausage). Wrap the sausage inside and roll it down, tighten the opening, and then roll it a little longer.

That's about it for 6~

7. Then prepare a little milk and brush a layer on the surface.

8. Dip the surface in a mixture of cheese powder and sesame powder.

Pack the sausages together, cover them, and freeze for 20 minutes to set (this step makes them easier to cut later). If you're not cutting them and are making large sausage packs, you don't need to freeze them.

❿After taking them out, divide each one into three small pieces~ Place them on a baking tray and let them rise at 33 degrees Celsius until doubled in size.

① After the dough has risen, preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit). Then, make a slit in the top of each bun, squeeze on some salad dressing, and sprinkle with chopped parsley.

① After preheating the oven, bake at 170 degrees Celsius for 13-15 minutes, depending on the browning. It smells amazing!
