🧙‍♀️Cake Base: Two 28cm x 28cm baking pans (San Neng brand), lined with parchment paper. Bake one pan for the cake, and use the other to roll the cake. Separate 8 eggs. Freeze the egg whites for 15 minutes. In the first large white bowl, add 80g corn oil, then sift in 80g cake flour and 20g cocoa powder, and mix with a small whisk in a Z-shape. Add 80g milk and 8 egg yolks, and mix with a Z-shape. In the stand mixer bowl, add 8 frozen egg whites with ice crystals and 2g lemon juice. Beat on the highest speed (11) for 1 minute until medium-stiff peaks form. During this time, add 80g granulated sugar in three batches, beating until stiff peaks form when the whisk is lifted.
