Baking | Steps to make matcha mille crepe

Step 1

1️⃣ Mix cake flour, cornstarch, matcha powder, powdered sugar, egg liquid, and milk until smooth, then sift twice. 2️⃣ Add the egg liquid in three batches, mixing well with a whisk. Once all the mixture is smooth, add the milk in batches, stirring well after each addition. Finally, add the melted butter, stir, sift, cover with plastic wrap, and refrigerate for a while. 3️⃣ Matcha cream: Mix a portion of the cream with matcha powder until smooth. Whip the remaining cream with powdered sugar until it reaches a yogurt-like consistency. Add the freshly whipped matcha paste and continue whipping until stiff peaks form. 3️⃣ Heat a non-stick pan over medium-low heat without oil. Pour in the batter, adding any excess. Once large bubbles form on the surface of the crepe, use a spatula to loosen the edges and invert it onto a plate. 4️⃣ Stack the crepes together and press them into a circle using a mold (or use a lid). 5️⃣ Cover completely with plastic wrap and refrigerate for half an hour to cool. 6️⃣ Layer a crepe with a layer of cream. Don't spread too much cream around the edges, or it will form a semi-circle. Sprinkle with matcha powder. ⚠️ This recipe has a slightly bitter taste, so you can reduce the amount of matcha powder.
