Blueberry Basque Cake Recipe Steps

Basque: 1️⃣ Soften cream cheese and add granulated sugar, mix well. 2️⃣ Add eggs in three batches, mixing well after each addition. Add butter in three batches, mixing well after each addition. 3️⃣ Sift cornstarch into the mixture and mix well. 4️⃣ Bake in the lower middle rack of the oven at 230 degrees Celsius for 25 minutes.

Blueberry Jam: 1️⃣ Crush blueberries, add granulated sugar, and simmer until thickened and coats the surface with a spatula. 2️⃣ Reduce heat to low and simmer until thickened, then add lemon juice, remove from heat and let cool.

Blueberry Mousse: 1️⃣ Soften cream cheese at room temperature, add sugar and mix well. 2️⃣ Add 50g blueberry jam and mix well. 3️⃣ Add heavy cream and whip with an electric mixer until soft peaks form. 4️⃣ Soak gelatin in ice water until softened, add to warm milk and melt, then add to the mousse mixture and mix well. 5️⃣ Pour into a baked Basque cheese and refrigerate for 6 hours or overnight. ‼ Top with the remaining blueberry jam and garnish with fresh blueberries.
