To make the dough: Except for the butter and salt, put all the dough ingredients into the stand mixer bowl and start kneading. First, knead on speed 3 for 2 minutes until a dough forms, then switch to speed 5 and knead for 8 minutes until a thick membrane appears. Add the softened butter and salt, and continue kneading on low speed (speed 3) for 2 minutes to combine. Then switch to speed 5 and knead for 8-10 minutes.

The dough reaches the windowpane stage, where it can be stretched into a thin film. This takes about 18 minutes to knead until a gluten window is formed. Pay attention to the dough temperature while kneading; if it's too hot, the windowpane window won't form. The dough temperature after kneading should not exceed 26 degrees Celsius. Round the dough, cover it with plastic wrap, and use a stand mixer's proofing function at 30 degrees Celsius for 60 minutes to proof until doubled in size.

Remove the dough, press out the air, divide it into 36 equal portions, each weighing approximately 29 grams. Shape each portion into a round ball and place them in a 28*28 cm baking pan for the second proofing. Bake in the oven at 39 degrees Celsius for 40 minutes using the proofing function until the dough doubles in size.

Brush a layer of pure milk on the surface of the fermented bread.

Place in a preheated oven: bake at 160 degrees Celsius (top heat) and 180 degrees Celsius (bottom heat) on the middle or lower rack for 20 minutes. Once you are satisfied with the color, cover with aluminum foil!
