Baking | Caramel Almond Salted Cream Cake Recipe Steps
Caramelized Almond Slices: 1️⃣ Whisk egg whites and granulated sugar until smooth, then add almond slices and mix well. 2️⃣ Line a baking sheet with parchment paper and spread the almond slices thinly. Bake in a preheated oven at 160°C (325°F) for 15 minutes (flipping after 8 minutes). 3️⃣ Let cool after baking.
Cake Base: 1️⃣ Mix corn oil and cocoa powder until smooth. Add milk and mix until emulsified. Sift in cake flour and stir in a Z-shape until no dry flour remains. Add egg yolks and mix in a Z-shape until combined. 2️⃣ Whisk egg whites with granulated sugar and lemon juice until stiff peaks form. Take 1/3 of the meringue and fold it into the egg yolk mixture. Then pour the mixture back into the remaining meringue and fold gently until combined. 3️⃣ Pour the batter into a baking pan from a height, smooth the surface, and tap to release air bubbles. 4️⃣ Bake in a preheated oven at 150°C (300°F) for 30 minutes. 5️⃣ Flip the cake over and let it cool. Press out cake slices using a mold.

Cream: Whip heavy cream, cream cheese, granulated sugar, and sea salt until stiff peaks form. (Assemble the parts shown in the picture above.)
