
My dad was hospitalized and has many underlying health conditions, so he has to avoid many foods. I had to make this cake specifically for him. Diabetics need to avoid sugar, and store-bought "sugar-free" cakes only mean no added sugar; they still contain sugar. I didn't add any sugar at all, relying on the natural sweetness of pumpkin and goji berries to adjust the flavor. Elderly people often have weak digestive systems, and refined flour can raise blood sugar. I added a small amount of whole wheat flour to improve this, but the proportion varies from person to person. I added 10%+, and I recommend no more than 30%. Otherwise, it will increase the digestive burden. A little salt is added for seasoning, but not too much, to avoid increasing the burden on the liver and kidneys. Because the oil content is very low and no sugar is added (sugar helps retain moisture), the cake is inevitably a bit dry. Adding pumpkin puree and thick yogurt can improve this and also increase nutritional value. This specially made cake certainly won't taste as good as those high in oil and sugar, but in balance, it's a good choice and better suited to the body's needs. You can also steam it for five or six minutes before eating to make it much more moist. The recipe makes one six-inch cake; I made two.

Steps for making a sugar-free pumpkin and goji berry health cake

Pumpkin slices steamed until cooked

Mash into a paste while still hot, then let cool and set aside.

Add corn oil and mix well.

Add egg yolks and mix well.

Sift in cake flour

No more than 30% whole wheat flour can be added as needed.

Stir until a smooth egg yolk mixture is formed.

Add a few drops of lemon juice to the egg whites and beat until slightly foamy. Then add cornstarch and continue beating. The cornstarch helps stabilize the egg whites.

Whip the egg whites until stiff peaks form; when you lift them, they should stand upright with small, upright peaks. There should be no sugar remaining. The egg whites must be whipped thoroughly, otherwise they won't have enough support.

Take 1/3 and mix it with the egg yolk mixture first.

Then pour in the remaining meringue and fold it in until well combined.

Finally, add an appropriate amount of goji berries and mix briefly. Soak the goji berries in warm water for one or two minutes to soften them.

Pour into the mold and gently tap to remove large air bubbles.

Preheat the oven to 150 degrees Celsius and bake for 50-60 minutes. Oven temperatures may vary, so keep a close eye on the cake. When it's almost done baking, gently tap the surface of the cake; it should spring back slightly and not make a sandy sound. It's ready when it's done.

Invert and let cool before unmolding.

The tissue is very soft when cut open.

For a richer flavor, add dried cranberries or other toppings you like to the cake batter during the cake batter preparation. It's slightly salty, healthy, and delicious.
