Beat butter and powdered sugar until smooth, then add eggs one at a time and beat until smooth. Add lemon juice and lemon zest and mix well. Sift cake flour and almond flour into the beaten butter and knead into a dough.

Knead the dough into a ball, place it on both sides with parchment paper, roll it out to a thickness of 4mm, and freeze it for about 8 to 10 minutes. Remove it and press it into shape using cookie cutters. Line a baking sheet with an air-cushioning mat, and arrange the pressed cookies on the sheet. Bake in a preheated oven at 150 degrees Celsius (300 degrees Fahrenheit) using the convection function for about 15 to 18 minutes. Observe the color of the cookies; they are done when the edges are lightly browned.

To make lemon curd: Combine whole eggs, sugar, lemon juice, and lemon zest in a saucepan and stir well. Heat over low heat, stirring constantly until thickened. Remove from heat, add butter and stir until completely melted. Strain the mixture and transfer to a piping bag. Meanwhile, beat cream cheese with powdered sugar until smooth.

Add the softened butter and stir until smooth, then add lemon juice and stir well. Transfer the mixture to a piping bag.

Pipe cheese filling onto the cookie base, then pipe lemon curd on top. Assemble the cookies in pairs.

Store in an airtight container in the refrigerator or freezer. I prefer it frozen; the taste is absolutely amazing! You absolutely have to try it if you haven't!
